My oldest granddaughter asked me if I had a nice recipe that she could surprise the family with as a Valentine's Day dessert. I had to think about it for a few minutes, but then I remembered I have this quick and easy no-bake cheesecake recipe. Dressed up with fresh strawberries cut in half to look like hearts, I'm pretty sure everyone would agree that this would make a lovely ending to any Valentine's dinner!
VALENTINE'S DAY NO BAKE CHEESECAKE
CRUST
1 1/2 cup fine graham wafer crumbs
1/4 cup of sugar
6 tbsp melted butter
Combine crumbs, sugar and butter. Press firmly on bottom of 9" pie pan. Chill while preparing filling.
FILLING
12 oz cream cheese
2 cups cold milk
2 tbsp sugar
1/2 tsp vanilla
1 package (3 3/4 oz.) Jello lemon or vanilla instant pudding and pie filling
Beat cream cheese until very soft. Blend in 1/2 cup milk. Add remaining milk, sugar and pudding mix.
Beat slowly until well-blended, about 2 minutes. Pour into crust.
Chill until firm - at least 2 hours.
GARNISH
1 cup strawberry pie filling
whole fresh strawberries
whipping cream
Take fresh strawberries and cut the tops into a V.
Cut each strawberry in half length wise (across the tops of the V).
Spread strawberry pie filling on top of the cheesecake, then spread a layer of whipping cream.
Carefully place your half strawberry hearts in a pattern of your choice with the cut side down.
